Well, when you read, you tend to pay attention to the highlighted words. Highlight the words  which give essential information of the text help people to understand the whole meaning of the text on a quick look. This prevents people from wasting time reading something they don’t care.

I also use it for words that I like or seem important to me beyond the essential content ^^
